Strawberry Jam. YUM YUM YUM. I didn't let the good buy on strawberries pass by this year. I bought them last Monday night, cleaned and chopped them, and then on Tue night I made jam(a double batch). We all have been eating PB&J all week, 3 meals a day!!!(well not that much-but close). Out of 12 jars, I'm down to 4!! Time to buy more!! Anyways, I love to bottle and to hear all the lids "POP" when they seal. Can't wait to get a garden going and start the canning season. (Sorry about the double image--computer difficulties)

Easter came and went like it was just another day. I guess my excitement for the holidays has gone down hill with the kids who don't get excited anymore. I couldn't even get Shaylee to color eggs. I had to boil some anyways for deviled eggs. This year, I just got one big basket and filled it with candy and a movie and an I-Tune card. And that was it. Boring.

Since we were in the "neighborhood", we had to stop at Cabelas on the way home the other night. So of course, I head right up the stairs to sample all the fudge when this jar caught my eye. It happened to be on clearance so of course I had to get it. I only bought 1 because I'm kinda leary about buying things I haven't tried before. Boy, I wished I had bought another one (or a dozen). It was dang good salsa! So if any of you are in the "neighborhood" think about me:)

Hunnington Beach
Hunnington Beach from the Pier. We walked to the end of the pier. The beach was so pretty.
They had cool designs in the rocks.

Some of our favorite rides were: Soarin' over California (we went 4 times), Tower of Terror (4 times--the boys 6), Indiana Jones (I went 5 times-I loved that one) Pirates of the Caribbean (5 times Jay really liked that one), Bracken and I were the only ones who would go on Grizzly River Run-nobody else wanted to get wet (I got SOAKED), Space mountain (3 times for me was enough, the kids rode that one at least 5 times!) Shaylee liked the Maliboomer, and Jay liked the California Screamin'(which they rode several times) We tried to get to most of the rides, but some of them had too long of lines and didn't have the fast-pass for them. (the top picture is a picture of a picture they took of us on the tower of terror)

SPRING BREAK!!!!!!
We just got home from WARM sunny California!!! It felt so good to get out in the nice warm sun!! We spent 3 days at Disneyland and 1 day at Hunnington Beach. Here are some pictures from our motel were stayed in. It was pretty nice. We had our breakfast delivered to our room every morning. The boys loved the outside pool, they were in it every break we took from Disneyland.(There was also some cheer-leading competition going on and their were quite a few of them staying at our motel, so the boys enjoyed that!!) It was also nice that Disneyland was on the same block and there were eating places and an outdoor mall right across the street. We loved it! I just wish the warm weather would follow us home!!!

I'm Back
I went to Texas to train on this new machine we are getting in our office. We had a great time in Dallas learning how to use the "E4-D". I actually can't wait to get to work on Monday so I can play with it(in case you are wondering what a E4-D is---it is a computer that takes a laser scan of your teeth and you design a crown or inlays or onlays and send this info to a milling machine that cuts your restoration out of porcelain blocks in about 15 mins then you can seat this on your patient the same day) The company really catered to you and put is in a nice hotel and fed us good and we even got a limo ride to the airport. It was great.

Apple dumplings
This is one you have to try!!!! Sara (Dr. Kelleys wife) made these and brought them in for the Dr's birthday a while back ago, and they were good. The recipe came from The Pioneer Woman Cookbook.com.
Peel and core apples. Cut apples into 8 slices each. Roll each apple slice in a crescent roll. Place in a 9 x 13 buttered pan. Melt butter, then add sugar and barely stir. Add vanilla, stir, and pour over apples. Pour Mountain Dew around the edges of the pan. Sprinkle with cinnamon and bake at 350 degrees for 40 minutes. Serve with ice cream, and spoon some of the sweet sauces from the pan over the top.
Then go to confession. Quickly.

Tiny Spicy Chicken
This is one of my kids favorite chicken dishes.
But we have to wait until Jay is out of town when we cook this.
You see........ my husband does not like chicken...
I know what your thinking.....................
WHAT!!!--Who doesn't like chicken???...
He doesn't.
He used to--But he said I cooked it too much when we first got married,
and now he doesn't like it.
And this is the look on his face when I tell him we are having chicken------
Oh the poor man. He is strickly a meat and potatoes-kind-of-man!!!
Anyways--- Heres the receipe:
Tiny Spicy Chicken
2 1/2 pounds chicken breast, cut in small pieces
Mix and coat chicken with :
1 cup corn starch
3 tsp garlic salt
Fry in oil
Then placed cooked chicken in a 9x13 pan and cover with sauce.
Sauce:
2/3 cup sugar
2/3 cup vinegar
1 or 2 garlic cloves finely chopped
1/2 tsp salt
1/3 cup pineapple juice
4 tbls ketchup
2 tbs soy or teryaki sauce
(I also like to add the chunk pineapple and a chopped bell pepper)
Bake at 350 degress for 45 minutes.
Serve over rice.
ENJOY!!!
(We will be having chicken in a couple of weeks)
